HOW TO MAKE HOMEMADE BAKED SWEET POTATO FRIES

  • Wash and peel sweet potatoes: use a vegetable peeler to peel off the skin. Peeling is optional, as you can also make fries with the skin on if desired.
  • Slice the sweet potatoes lengthwise into long fry-shaped pieces, about 1/2 inch thick. Try to cut them into similarly sized pieces so the fries will bake evenly. For extra crispy sweet potato fries, soak the uncooked fries in ice-cold water for 20 minutes. Place the fries on a clean kitchen towel and gently pat them dry to remove excess moisture.
  • When ready to bake, preheat the oven to 400 degrees Fahrenheit. Line two baking sheets with parchment paper. Set aside. 
  • Transfer the fries to a large bowl and toss the sweet potato strips with olive oil, garlic powder, pepper, smoked paprika, dried tarragon, and salt. Stir well to ensure they’re evenly coated.
  • Spread the fries among the two prepared baking sheets in a single layer so that they are not overlapping each other. (I like to bake the fries on two baking sheets so that they don’t crowd each other and have a better chance to brown and turn crispy).

HOW TO BAKE SWEET POTATO FRIES

  • Bake for 20 minutes, then remove the baking sheets from the oven and use tongs or a spatula to gently turn over all of the sweet potato pieces (be cautious, as the pan will be hot!). Return to the oven and bake for another 15-20 minutes or until they are lightly browned on the tips. 
  • Remove from the oven and add a generous sprinkling of sea salt. These are best served right away as they tend to get soft and slightly soggy if they rest for too long. If you’d like, you can also garnish them with a little minced parsley for a pop of green color.

TIPS FOR SUCCESS:

  • Cut evenly: Be sure to cut your sweet potatoes into thin, even strips so they bake at the same rate. This helps prevent some fries from being overcooked while others are undercooked. Keep in mind that thicker fries won’t get as crispy as thinner ones.

Ingredients
  

  • 1 pound sweet potatoes, peeled (medium 4 potatoes)
  • 2 tablespoons extra virgin olive oil  or avocado oil
  • 1 teaspoon garlic powder 
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon dried tarragon  optional
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper

  • Preheat oven to 400 degrees Fahrenheit. Line two baking sheets with parchment paper. Set aside.
  • Peel the sweet potatoes using a vegetable peeler. Slice the sweet potatoes lengthwise into long fry-shaped pieces, about 1/2 inch thick. Try to cut them into similarly sized pieces so the fries will bake evenly.
