Set them aside so they start marinating in their own juices. Slice your red onion thin and cut the cherry tomatoes in half. Add the red onion and the cherry tomatoes to cucumbers and toss together.

Ingredients
- 2 cups grape or cherry tomatoes cut in half
- 2 English cucumber sliced into bite-size chunks
- 1/4 cup red onion thinly sliced
- 1/4 teaspoon garlic salt
- 3 to 4 tablespoons fresh mint leaves sliced into ribbons or strands
Dressing:
- 2 tablespoons extra virgin olive oil
- 1 1/2 tablespoons fresh lemon juice more or less per taste
- freshly ground black pepper to taste
