INGREDIENTS FOR BACON WRAPPED SPICY BEANS

  • Green Beans. Use fresh green beans for this recipe. Thinner beans work best because they cook more quickly and evenly.
  • Sliced Bacon. I use regular sliced bacon for this recipe, but feel free to use your favorite kind.
  • Sauce: A mixture of melted butter, honey, brown sugar, minced garlic, chili powder, lemon juice, salt, and black pepper.
  • Parsley. Optional, to garnish.

HOW TO MAKE BACON WRAPPED SPICY BEANS

Preheat the oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper. Trim the ends of the green beans and wash them under cold running water. Bring a large pot of water to a boil and cook the beans for about 2 to 3 minutes. Using a slotted spoon, transfer the beans immediately into a bowl of ice water. Drain them well, then spread the beans on a clean kitchen towel and gently pat them completely dry.

In a small bowl combine melted butter, brown sugar, honey, chili pepper powder, minced garlic, lemon juice, salt, and black pepper. Whisk everything together. Once the beans are dry, divide them into small bundles of about five or six beans each.

Wrap one slice of bacon around every bundle, starting at one end and overlapping the bacon slightly as you go. Place the seam underneath so the bacon stays in place. Arrange the bundles seam side down on the prepared baking sheet.

Using a pastry brush, coat the top of each bacon-wrapped bundle with the prepared glaze. Cover the baking sheet with foil and place it in the center of the oven. Bake for 15 to 20 minutes, then remove the foil and continue baking for another 15 to 20 minutes. Once finished, remove the tray from the oven, and if you like, sprinkle a little fresh parsley over the top. Serve them warm as a flavorful side dish or a simple appetizer.

GREEN BEAN BUYING GUIDE: When shopping for green beans, choose beans that are brightly colored, crisp, and fresh. Avoid beans that look dull or blemished, as they will not cook as well. To check for freshness, gently bend a bean. It should snap cleanly rather than bend.

HOW TO STORE AND REHEAT BACON WRAPPED SPICY BEANS

Once baked, let the green bean bundles cool completely, then transfer them to an airtight container. Store in the refrigerator for up to 3 days. To reheat, place them in a 350°F oven for 5 to 6 minutes, or until warmed through.
