  • Waffle iron

Ingredients
  

  • 2 large eggs 
  • 3/4 cup ricotta cheese 
  • 1/2 cup spelt flour 
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon baking powder 
  • 1/2 teaspoon vanilla sugar  or pure vanilla extract
  • 75 ml milk 

Instructions
 

  • Combine all ingredients in a mixing bowl. Stir well.
  • Grease a waffle iron with oil or cooking spray. Preheat the iron according to the manufacturer's instructions. Once the iron is hot, pour 1/4 cup of batter into the center, close the lid, and cook until golden brown. (My waffle machine has a light that goes out when the waffle is done).
  • Serve with pure maple syrup, pancake syrup or your favorite waffle toppings.
