This easy recipe for Ricotta Waffles makes soft, crispy waffles that are not only a perfect and healthy breakfast but also a filling snack or even dessert.
Equipment
- Waffle iron
Ingredients
- 2 large eggs
- 3/4 cup ricotta cheese
- 1/2 cup spelt flour
- 1 teaspoon granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla sugar or pure vanilla extract
- 75 ml milk
Instructions
- Combine all ingredients in a mixing bowl. Stir well.
- Grease a waffle iron with oil or cooking spray. Preheat the iron according to the manufacturer's instructions. Once the iron is hot, pour 1/4 cup of batter into the center, close the lid, and cook until golden brown. (My waffle machine has a light that goes out when the waffle is done).
- Serve with pure maple syrup, pancake syrup or your favorite waffle toppings.
