The combination of spelt flour with the creamy ricotta makes a wholesome twist to the classic breakfast favorite. Spelt flour, known for its nutty flavor and nutritional benefits, adds a hearty, slightly earthy taste to the waffles, creating a unique and delicious breakfast option.

HOW TO STORE LEMON RICOTTA WAFFLES?

  • The waffles can be stored in the freezer for up to 1-2 months. Always let your waffles cool completely before freezing. LEMON RICOTTA WAFFLES

These lemon ricotta waffles are soft, tender and so flavourful. The ricotta adds richness and great texture to the waffles and you really get a nice lemony zing in them thanks to the fresh lemon zest. This Lemon Ricotta Waffles recipe is perfect for those lazy weekend mornings when you have a little extra time for breakfast or brunch.

Ingredients
  

  • 2 large eggs 
  • 150 g ricotta cheese 
  • 60 g spelt flour 
  • 30 ml whole milk
  • 1 teaspoon granulated sugar
  • 2 g baking powder 
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon zest of a lemon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • cooking spray

Instructions
 

  • In a large bowl, whisk together the flour, salt, and baking powder.
  • In a medium bowl, rub together granulated sugar and lemon zest until the sugar is scented with lemon.
  • Add the lemon sugar to the bowl with dry ingredients (to the flour mixture) and whisk together.
  • In a large measuring cup, whisk together eggs, vanilla, lemon juice, ricotta and milk.
  • Add the wet ingredients to dry ingredients and mix until thoroughly combined.
  • Cover the bowl with plastic wrap and let sit at room temperature for 5-10 minutes.
  • Preheat the waffle iron, and spray lightly with non stick cooking spray. Spoon 1/4 cup of batter into the waffle iron and cook until golden brown. Repeat with remaining batter.
  • Serve immediately with your favourite topping and fruits.
