Cucumber Tomato Salad with Mint is a refreshing, tasty and very easy to make. Makes for a perfect side dish that goes with almost everything. It's the perfect salad to throw together when you are craving something healthy and delicious quick.
3 to 4tablespoons fresh mint leavessliced into ribbons or strands
Dressing:
2tablespoons extra virgin olive oil
1 1/2tablespoons fresh lemon juicemore or less per taste
freshly ground black pepper to taste
Instructions
Add all of the ingredients for the dressing to a mason jar, shake to combine. Set aside.
Wash and peel your cucumbers. Set the slice cucumbers aside in a large salad bowl. Salt them with the garlic salt and toss them around. Set them aside so they start marinating in their own juices.
Slice your red onion thin and cut the cherry tomatoes in half.
Add the red onion and the cherry tomatoes to cucumbers and toss together.
Pour the dressing over the vegetables and toss well to coat thoroughly.
Thinly slice your mint and add to the bowl. Taste and adjust salt if needed.
I let this chill in the fridge for a bit before serving but it can be served immediately.
Notes
Storage: Place leftovers in a glass container and store in the fridge for up to 24 hours. Serve cold. Make Ahead: You can cut up the vegetables a little ahead of time, but dress them right before serving.
