HOW TO MAKE WATERMELON FETA BERRY SALAD

1. CHOP THE WATERMELON

First, chop the watermelon into small, bite-sized pieces. One easy method is to cut the watermelon in half. Place the halves cut side down on a cutting board. Using a sharp knife, make vertical and horizontal cuts about 1 inch apart to create a grid pattern. This will result in long rectangular sticks, which you can then cut into cubes.

2. MAKE THE HONEY LEMON DRESSING

In a small bowl, whisk together the honey, squeezed lemon juice, and sea salt, then set it aside.

3. ASSEMBLE THE SALAD

Add the watermelon, blueberries, basil, and mint leaves to a large bowl. Crumble the feta cheese into the bowl and toss everything together.   • Other fruit/vegetables: You can experiment with several other add-ins, including Arugula, strawberries, blackberries, cucumber, red onions (raw or pickled), figs, grapes, apples, pomegranate seeds (a favorite of mine).
  • Nuts/Seeds: For added crunch, you can sprinkle over crushed pistachios, walnuts, pine nuts, hazelnuts, sesame seeds, or hemp seeds.

HOW TO MAKE AHEAD AND STORE

I wouldn’t suggest preparing the entire salad ahead of time, as the dressing can make the watermelon soggy if stored. Instead, prep all the ingredients in advance and assemble the salad just before serving for the best texture and freshness:

MAKE AHEAD INSTRUCTIONS:

  • You can chop the watermelon up to a day in advance and keep it stored in an airtight large container in the refrigerator.
  • Make the honey-lemon dressing and keep it stored in the refrigerator.
  • Fresh mint and fresh basil should be sliced right before serving.
  • When ready to serve, toss everything with dressing and serve immediately.

STORE:

  • Store any leftover watermelon feta berry salad in an airtight container in the fridge for 1-2 days. Since the salad tends to become soggy after being tossed with the dressing, it’s best to enjoy it as soon as possible for optimal freshness.

  • 5 cups watermelon seedless or with seeds cut into cubes
  • 1 1/2 cup fresh blueberries plus more to taste
  • 3/4 cup Feta cheese, crumbled (or more to taste)
  • 2 tablespoons fresh basil, thinly sliced (or more to taste)
  • 2 tablespoons fresh mint, thinly sliced (or more to taste)

For the Dressing:

  • 2 tablespoons fresh lemon juice (about 1 whole lemon)
