

Greek Yogurt Roasted Cauliflower
Sometimes it is easy to forget that just a few simple ingredients can come together to make something delicious. This dish makes a great appetizer or side dish.
Ingredients
Roasted cauliflower ingredients
- 1 head of cauliflower cut in bite sized florets
- 3 tsp spelt flour or flour of your choice
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- sea salt and freshly ground pepper to taste
- 4 tbsp Greek yogurt
- 2 tbsp fresh parsley Chopped
Instructions
- Preheat the oven to 450° F and line a large baking sheet with parchment paper.
- Chop the cauliflower into small florets. In a large bowl, mix yogurt, spelt flour, garlic powder, paprika, cumin, cayenne pepper, sea salt and freshly ground pepper until smooth. Put the cauliflower florets in the bowl and toss with yogurt mixture until fully coated with the mixture.
- Spread coated cauliflower in a single layer on a large baking tray. Place in the oven for approximately 30 minutes, or until browned and tender.
- Remove cauliflower from oven once done. Serve immediately and sprinkle with chopped parsley. Add salt + pepper as needed.
