Roasted Cauliflower Parmesan Steaks

These Roasted Cauliflower Parmesan Steaks are delicious and packed with flavor. This dish is a perfect addition to your meatless meals and works well as a flavorful side dish.

Ingredients
  

  • 1 medium head cauliflower sliced lengthwise through the core
  • 3 tablespoons olive oil preferably extra-virgin
  • 1/4 teaspoon curry powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • salt and freshly ground black pepper to taste
  • 3/4 cup grated Parmesan cheese

Instructions
 

  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • In a small bowl, mix together the olive oil, curry powder, garlic powder, and smoked paprika.
  • Remove and discard the outer leaves of the cauliflower, leaving the stalk intact. Using a large knife, cut the cauliflower in half, then slice it into as many 1-inch-thick steaks as possible. (You will have some florets as well—roast them along with the cauliflower steaks.)
  • Arrange the cauliflower slices on the prepared baking sheet. Brush the oil and seasoning mixture evenly over the tops, then season with salt and black pepper to taste.
  • Roast for 15–20 minutes, or until browned and tender. Remove from the oven, sprinkle with grated Parmesan cheese, and return to the oven for another 5–10 minutes, until the cheese is melted.
    Transfer the cauliflower steaks to a serving platter and serve immediately.

Notes

How to Store Roasted Cauliflower Steaks:  Store roasted cauliflower steaks in an airtight container in the refrigerator for up to 2–3 days. To reheat, warm them in the oven for 10–15 minutes or in the microwave for 2–3 minutes. Not suitable for freezing.
