CHERRY TOMATO GOAT CHEESE TARTS

Cherry Tomato Goat Cheese Tarts are made with flaky puff pastry, sweet caramelized red onion, juicy tomatoes, and creamy goat cheese. This simple, elegant tart is perfect for weekend brunch or a light, satisfying weeknight dinner.

Ingredients
  

  • 2 sheets puff pastry, thawed from frozen (450g)
  • 2 medium red onions, thinly sliced (about 2 cups)
  • 1 pint cherry or grape tomatoes cut in half  (about 2 cups)
  • 1 cup goat cheese 
  • 1 large egg, for egg wash (whisked with 1 tablespoon water)
  • 1 1/2 tablespoons unsalted butter 
  • Everything Bagel seasoning blend (2-3 tablespoons)
  • fresh basil for garnish optional

Instructions
 

  • Prep: Preheat oven to 400℉ (200℃). Line a baking sheet with parchment paper and set aside.
    Melt the butter in a large skillet over medium heat. Add the sliced red onion and cook slowly, stirring often, until the onions are soft, golden, and caramelized, about 12–15 minutes. Remove from heat and let cool slightly before assembling.
    Work with one sheet of puff pastry at a time. Unfold the puff pastry sheet and, if the thickness is uneven, gently roll it out slightly with a rolling pin on the included sheet of parchment paper. Cut the sheet into 6 rectangles, about 3⅓ x 5 inches each. Repeat with the second sheet, then transfer the pastry pieces to the prepared baking sheet.
  • Assembly: Use a fork to prick the center of each pastry square, leaving a small border around the edges. Whisk the egg in a small bowl, add 1 tablespoon of water and brush the edges of each square with egg wash using a pastry brush.
    Spoon the caramelized onions evenly onto the center of each square. Add pieces of goat cheese, then top with cherry tomatoes, pressing them in slightly so they stay in place. Sprinkle Everything Bagel seasoning over the top.
  • Bake: Bake for 18-20 minutes, rotating the baking sheet halfway through for even browning, until the pastry is puffed and deeply golden and the cheese is slightly melted.
    Remove from the oven and allow the tarts cool for a few minutes before serving so the filling sets. Serve warm or at room temperature.
