Potato Pancakes
POTATO PANCAKES are my favourite comfort food. Golden and crispy on the outside and delicate on the inside. This is perfect recipe for a quick and easy dinner.
Ingredients
- Potatoes (4 large/8 small)
- 1 medium onion
- 2-3 cloves garlic
- 2 eggs beaten
- 2 tbsp all-purpose flour
- Salt
- Ground black pepper
- Vegetable oil for frying
- Sour cream and green onions for serving
Instructions
- Using food processor grate potatoes, onion and garlic. Add eggs, flour, salt and pepper, combine. Mixture should be thick, not runny. If the mixture is too runny add more flour.
- Heat oil in a large skillet over moderately high heat. Drop 2 tbsp of batter and flatten to make thick pancake. Fry for about 3-5 minutes per side or until golden brown on both sides. Transfer to paper towel lined plate to drain.
- Serve pancakes with sour cream mixed with green onions.Enjoy!
