POTATO PANCAKES are my favourite comfort food. Golden and crispy on the outside and delicate on the inside. This is perfect recipe for a quick and easy dinner.

Ingredients
  

  • Potatoes (4 large/8 small)
  • 1 medium onion 
  • 2-3 cloves garlic 
  • 2 eggs beaten 
  • 2 tbsp all-purpose flour 
  • Salt
  • Ground black pepper 
  • Vegetable oil for frying 
  • Sour cream and green onions for serving 

Instructions
 

  • Using food processor grate potatoes, onion and garlic. Add eggs, flour, salt and pepper, combine. Mixture should be thick, not runny. If the mixture is too runny add more flour. 
  • Heat oil in a large skillet over moderately high heat. Drop 2 tbsp of batter and flatten to make thick pancake. Fry for about 3-5 minutes per side or until golden brown on both sides. Transfer to paper towel lined plate to drain. 
  • Serve pancakes with sour cream mixed with green onions.
